EDTA - a food additive sequestrant Unwanted metals often find there way into food from the soil and from machinery during harvesting and processing. Often these metals, such as copper, iron and nickel, then degrade the food stuffs by catalyzing the oxidation of the fats in the food. A class of food additives known as sequestrants can be added to food. The additive reacts with trace metals in foods, forming tightly bound complexes (sequestered), thereby preventing the decomposition of the food. The term "sequestrant" could be replaced by "chelating agent" as far as definitions. EDTA (ethylenediaminetetraacetic acid). The EDTA molecule can bind to metal ions These and other metals play a far greater role of harm in the body, causing free radical activity which, ultimately is the cause of all heart disease and cancer. Removal of these metals with EDTA is well established in the sense of chemistry, but not yet well understood in terms of health and prevention. The sodium and calcium salts of EDTA (ethylenediaminetetraacetic acid) are common sequestrants in many kinds of foods and beverages They are also used in intravenous chelation therapy and in Vibrant Life's oral chelation formulas.. |
